Ingredients

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated erythritol
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated erythritol (for filling)
  • 2 large eggs
  • 1 teaspoon vanilla extract (for filling)
  • 1/2 cup guava puree (fresh or canned)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease a 9-inch springform pan with cooking spray or butter.
  3. In a medium bowl, combine almond flour, cocoa powder, erythritol, melted butter, vanilla extract, and salt. Mix until well combined and crumbly.
  4. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  5. Bake for 10 minutes, then remove from the oven and let it cool.
  6. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  7. Gradually add the erythritol, mixing until well incorporated.
  8. Add the eggs one at a time, mixing well after each addition.
  9. Stir in the vanilla extract, guava puree, and lemon juice until fully combined.
  10. Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
  11. Bake for 45-50 minutes, or until the edges are set and the center has a slight jiggle.
  12. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  13. Once cooled, refrigerate the cheesecake for at least 4 hours, or preferably overnight, before serving.

Notes

  • For a lighter version, substitute half of the cream cheese with Greek yogurt.
  • Consider swirling in some additional guava puree on top of the cheesecake before baking for added flavor.
