Description

A classic New York style cheesecake that is rich, creamy, and utterly irresistible.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with butter or non-stick spray.
  2. In a medium bowl, combine the graham cracker crumbs, 1/2 cup sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  4. Gradually add 1 cup sugar and vanilla extract, mixing until well combined.
  5. Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
  6. Stir in the sour cream, flour, and salt until smooth.
  7. Pour the cream cheese mixture over the cooled crust in the springform pan.
  8. Bake in the preheated oven for 60-70 minutes, or until the edges are set and the center is slightly jiggly.
  9. Turn off the oven and crack the oven door, letting the cheesecake cool in the oven for 1 hour to prevent cracking.
  10. Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

  • For a fruit topping, consider adding a layer of fresh strawberries or blueberries on top before serving.
  • To add a twist, mix in 1/4 cup of lemon juice and zest for a refreshing citrus flavor.
