  • 2 tablespoons sake (Japanese rice wine)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • Green onions, chopped (for garnish)
  • Bamboo skewers (soaked in water for 30 minutes)

Instructions

  1. In a bowl, combine soy sauce, mirin, sake, brown sugar, sesame oil, garlic powder, ground ginger, and black pepper. Whisk until the sugar is dissolved to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates to prevent sticking.
  4. Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Brush with any remaining marinade during grilling for extra flavor.
  6. Remove from the grill and let rest for a couple of minutes. Garnish with chopped green onions before serving.
