- 2 tablespoons sake (Japanese rice wine)

- 1 teaspoon sesame oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 1/4 teaspoon black pepper
- Green onions, chopped (for garnish)
- Bamboo skewers (soaked in water for 30 minutes)
Instructions
- In a bowl, combine soy sauce, mirin, sake, brown sugar, sesame oil, garlic powder, ground ginger, and black pepper. Whisk until the sugar is dissolved to create the marinade.
- Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or grill pan over medium-high heat. If using a grill, oil the grates to prevent sticking.
- Thread the marinated chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Brush with any remaining marinade during grilling for extra flavor.
- Remove from the grill and let rest for a couple of minutes. Garnish with chopped green onions before serving.
