Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup honey
  • 1/2 cup brown sugar, packed
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sesame seeds (optional)
  • Vegetable oil for frying

Instructions

  1. In a large bowl, whisk together the flour, baking soda, and salt. Set aside.
  2. In another bowl, mix the honey, brown sugar, vegetable oil, egg, cinnamon, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. If the dough is too sticky, you can add a little more flour.
  4. Divide the dough into small balls, about 1 inch in diameter. Flatten each ball slightly and, if desired, sprinkle sesame seeds on top.
  5. Heat vegetable oil in a deep frying pan over medium heat. Once hot, carefully add the flattened dough pieces, frying in batches to avoid overcrowding.
  6. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.
  7. Allow the cookies to cool slightly before serving.

Notes

  • For a richer flavor, try adding a tablespoon of finely chopped nuts to the dough.
  • You can also drizzle melted chocolate over the cooled cookies for a decadent twist.
