Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mixed wild mushrooms, sliced (such as shiitake, cremini, and oyster)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded Gruyère cheese
  • 1 cup fresh spinach, roughly chopped
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon nutmeg (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. Grease a 9-inch pie dish or a similar baking dish with cooking spray or a little olive oil.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Stir in the minced garlic and cook for an additional minute.
  6. Add the sliced mushrooms to the skillet, along with the thyme, salt, and pepper.
  7. Cook until the mushrooms are tender and any liquid has evaporated, about 8-10 minutes.
  8. Remove from heat and let cool slightly.
  9. In a large mixing bowl, whisk together the eggs and heavy cream until well combined.
  10. Stir in the Gruyère cheese, chopped spinach, and the cooled mushroom mixture.
  11. If using, add the nutmeg for extra flavor.
  12. Pour the mixture into the prepared pie dish, spreading it evenly.
  13. Sprinkle the grated Parmesan cheese on top.
  14. Bake in the preheated oven for 30-35 minutes, or until the galette is set in the center and golden brown on top.
  15. Let it cool for about 10 minutes before slicing.
