- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup macadamia nuts, chopped
- 1/4 cup erythritol or your preferred keto sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar-free white chocolate chips
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil, melted
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, shredded coconut, chopped macadamia nuts, erythritol, baking powder, and salt. Stir until well mixed.
- In a separate bowl, whisk together the egg, vanilla extract, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms.
- Gently fold in the sugar-free white chocolate chips.
- Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the back of a spoon.
- Bake for 10-12 minutes or until the edges are golden.
- Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, try adding a teaspoon of almond extract to the dough.
- If you prefer a crunchier texture, toast the macadamia nuts lightly before chopping them.
