Description
A delicious recipe for Warak Enab, or stuffed vine leaves, filled with a flavorful rice mixture and herbs.
Ingredients

- 1 cup uncooked long-grain rice
- 1 medium onion, finely chopped
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon allspice
- 1/4 teaspoon cinnamon
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 jar (16 oz) grape leaves, rinsed and drained
- 1 lemon, juiced
- 2 cups vegetable broth or water
- 1/4 cup pine nuts (optional)
Instructions
- In a medium saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the rice, salt, black pepper, allspice, and cinnamon. Cook for an additional 2-3 minutes, stirring frequently.
- Remove the saucepan from heat and mix in the parsley, mint, and pine nuts (if using). Allow the mixture to cool slightly.
- Lay a grape leaf on a flat surface, vein side up. Place about 1 tablespoon of the rice mixture near the stem end of the leaf. Fold the sides over the filling and roll tightly from the stem end to the tip. Repeat with remaining leaves and filling.
- In a large pot, arrange any leftover grape leaves on the bottom to prevent sticking. Place the stuffed grape leaves seam side down in the pot, packing them snugly.
- Pour the vegetable broth or water over the stuffed leaves and drizzle with lemon juice. Place a plate on top to keep them submerged.
- Cover the pot and simmer on low heat for about 45 minutes to 1 hour, until the rice is fully cooked and the leaves are tender.
- Allow to cool slightly before serving. Enjoy warm or at room temperature.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the rice mixture.
- You can also substitute quinoa for rice for a gluten-free option.
