Ingredients

  • 4 large beef marrow bones (about 6 inches long)
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon truffle oil
  • 1 teaspoon truffle salt (optional)
  • 1 baguette, sliced into 1-inch pieces
  • 1 clove garlic, halved
  • Fresh lemon wedges, for serving

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Place the marrow bones upright in a roasting pan and drizzle with olive oil. Sprinkle with sea salt and black pepper.
  3. Roast the bones in the preheated oven for 15-20 minutes, or until the marrow is bubbly and begins to pull away from the bone.
  4. While the bones are roasting, prepare the baguette. Arrange the slices on a baking sheet and toast in the oven for the last 5-7 minutes of the bone roasting time, until golden brown.
  5. Remove the bones from the oven and let them cool slightly. Drizzle the marrow with truffle oil and sprinkle with truffle salt, if using.
  6. To serve, spread the warm marrow onto the toasted baguette slices and top with chopped parsley. Squeeze fresh lemon juice over the top for added brightness.
  7. Enjoy immediately while warm.
