A flavorful Vietnamese beef stew that is hearty and perfect for any occasion.

- 2 pounds beef chuck, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 can (14 ounces) diced tomatoes, undrained
- 2 cups beef broth
- 1 tablespoon fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon star anise (or 1/2 teaspoon ground star anise)
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Crusty bread or rice, for serving
Instructions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef cubes and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent, about 3-4 minutes.
- Return the browned beef to the pot and add the carrots, celery, diced tomatoes, beef broth, fish sauce, soy sauce, brown sugar, cinnamon, star anise, black pepper, and cayenne pepper (if using). Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add more broth or water if needed.
- Once the beef is tender, taste and adjust seasoning if necessary. Serve hot, garnished with fresh cilantro and lime wedges, alongside crusty bread or over rice.
Notes
- For a spicier kick, add sliced jalapeños or a dash of sriracha to the stew.
- Substitute beef with chicken or tofu for a different protein option, adjusting cooking times as needed.
