Description

Ingredients

  • 5 large egg yolks

  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C). Place six ramekins in a large baking dish.
  2. In a medium saucepan, heat the heavy cream and vanilla extract over medium heat until it just begins to simmer. Remove from heat and let it cool slightly.
  3. In a mixing bowl, whisk together the egg yolks, granulated sugar, and salt until the mixture is pale and slightly thickened.
  4. Gradually pour the warm cream into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  5. Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.
  6. Carefully pour the custard mixture into the ramekins, filling them about three-quarters full.
  7. Fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.
  8. Bake in the preheated oven for 30-35 minutes, or until the edges are set but the centers are still slightly jiggly.
  9. Remove the ramekins from the water bath and let them cool to room temperature. Refrigerate for at least 2 hours, or overnight for best results.
  10. Before serving, sprinkle a thin layer of brown sugar on top of each custard. Using a kitchen torch, caramelize the sugar until it forms a crispy crust. If you don’t have a torch, place the ramekins under a broiler for 1-2 minutes, watching closely to avoid burning.
