- 2 cups almond flour
- 8 oz cream cheese, softened
- 1/2 cup granulated erythritol (or preferred keto sweetener)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar-free chocolate chips (optional)
- Red and pink sprinkles (sugar-free, optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the softened cream cheese and erythritol together until smooth and creamy.
- Add the egg and vanilla extract to the cream cheese mixture and mix until well combined.
- In a separate bowl, whisk together the almond flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. If desired, fold in the sugar-free chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each cookie with the back of a fork or your fingers. If using, sprinkle the tops with sugar-free sprinkles.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
