Description
Ultimate Crispy Ube Waffles are a delightful treat that combines the unique flavor of ube with a crispy texture, perfect for breakfast or brunch.
Ingredients
Scale
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup ube puree (canned or homemade)
- 1/4 cup granulated sugar
- 2 large eggs
- 1 1/2 cups milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, combine the ube puree, sugar, eggs, milk, melted butter, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Lightly grease the waffle iron with cooking spray or a little melted butter. Pour the recommended amount of batter onto the hot waffle iron (usually about 1/2 to 3/4 cup, depending on your iron). Close the lid and cook until the waffles are golden brown and crispy, about 5-7 minutes.
- Carefully remove the waffles and keep them warm in a low oven while you cook the remaining batter.
Notes
- For extra crispiness, let the batter rest for about 10 minutes before cooking.
- You can add a pinch of cinnamon or nutmeg to the batter for a warm spice flavor.
- Top the waffles with whipped cream and fresh berries or drizzle with coconut syrup for a fun twist.
