Ube Halaya is a creamy delight made from purple yam, coconut milk, and sweetened condensed milk, perfect for dessert or a snack.

- 2 cups grated ube (purple yam), fresh or frozen
- 1 can (13.5 ounces) coconut milk
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a large saucepan, combine the grated ube, coconut milk, sweetened condensed milk, and granulated sugar. Stir well to combine all ingredients.
- Place the saucepan over medium heat and cook the mixture, stirring constantly to prevent sticking, until it begins to thicken, about 10-15 minutes.
- Add the unsalted butter, vanilla extract, and a pinch of salt to the mixture. Continue to cook, stirring frequently, until the mixture is thick enough to hold its shape, approximately 20-30 minutes.
- Once thickened, transfer the ube mixture to a greased 9×9-inch baking dish or a similar-sized container. Spread it evenly and smooth the top with a spatula.
- Allow the Ube Halaya to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set completely.
- Once chilled, cut into squares or scoop into serving bowls. Serve as a dessert or snack.
Notes
- For a richer flavor, consider adding 1/4 cup of shredded coconut to the mixture before cooking.
- You can also top the Ube Halaya with grated cheese or toasted coconut flakes for added texture and taste.
