- 2 large eggs
- 1 cup granulated sugar

- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder

Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, combine the flour, powdered sugar, softened butter, and salt. Mix until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking dish to form the crust. Bake for 15-20 minutes, or until lightly golden.
- While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder in a separate bowl until well combined.
- Pour the lemon mixture over the hot crust and return to the oven. Bake for an additional 20-25 minutes, or until the filling is set and lightly golden.
- Allow the lemon bars to cool in the pan on a wire rack. Once cooled, refrigerate for at least 1 hour before cutting into squares.
- Dust with powdered sugar before serving, if desired.
Notes
- For an extra twist, try adding a teaspoon of vanilla extract to the lemon filling for added depth of flavor.
- You can also substitute lime juice for lemon juice for a refreshing variation.
