Description

A delicious and aromatic Thai Tea Cake that combines the unique flavors of Thai tea with a moist cake and creamy frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup brewed Thai tea, cooled
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • ¼ cup brewed Thai tea, cooled (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Add the softened butter, eggs, brewed Thai tea, vanilla extract, and almond extract to the dry ingredients. Beat on medium speed for about 2-3 minutes until the batter is smooth and well blended.
  4. Divide the batter evenly between the prepared cake pans.
  5. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer them to wire racks to cool completely.
  7. While the cakes are cooling, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, followed by the brewed Thai tea and vanilla extract. Beat until the frosting is smooth and fluffy.
  8. Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer on top and frost the top and sides of the cake.
  9. Serve immediately or refrigerate for up to 3 days.

Notes

  • For a richer flavor, try adding a teaspoon of cardamom to the batter.
  • For a lighter version, substitute half of the butter with unsweetened applesauce.
