- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2–3 tablespoons green curry paste (adjust to taste)
- 1 can (13.5 ounces) coconut milk
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1 cup broccoli florets
- 1 cup baby spinach
- 1 pound tofu, cubed (or chicken, if preferred)
- Fresh basil leaves, for garnish
- Cooked jasmine rice, for serving
Instructions
- In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the green curry paste and cook for another minute, stirring constantly to combine with the onion mixture.
- Pour in the coconut milk and vegetable broth, stirring well to incorporate the curry paste. Bring to a gentle simmer.
- Add the soy sauce and brown sugar, stirring until the sugar dissolves.
- Add the tofu (or chicken) and cook for about 5 minutes, allowing it to absorb the flavors.
- Stir in the sliced red bell pepper, snap peas, and broccoli florets. Cook for another 5-7 minutes until the vegetables are tender but still crisp.
- Finally, add the baby spinach and cook until just wilted, about 1-2 minutes.
- Serve hot over cooked jasmine rice and garnish with fresh basil leaves.
Notes
- For a spicier kick, add sliced jalapeños or a dash of sriracha to the curry.
- Substitute the tofu with shrimp or chicken for a different protein option, adjusting the cooking time accordingly.
