  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 23 tablespoons green curry paste (adjust to taste)
  • 1 can (13.5 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 1 cup baby spinach
  • 1 pound tofu, cubed (or chicken, if preferred)
  • Fresh basil leaves, for garnish
  • Cooked jasmine rice, for serving

Instructions

  1. In a large pot or skillet, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the green curry paste and cook for another minute, stirring constantly to combine with the onion mixture.
  4. Pour in the coconut milk and vegetable broth, stirring well to incorporate the curry paste. Bring to a gentle simmer.
  5. Add the soy sauce and brown sugar, stirring until the sugar dissolves.
  6. Add the tofu (or chicken) and cook for about 5 minutes, allowing it to absorb the flavors.
  7. Stir in the sliced red bell pepper, snap peas, and broccoli florets. Cook for another 5-7 minutes until the vegetables are tender but still crisp.
  8. Finally, add the baby spinach and cook until just wilted, about 1-2 minutes.
  9. Serve hot over cooked jasmine rice and garnish with fresh basil leaves.

Notes

  • For a spicier kick, add sliced jalapeños or a dash of sriracha to the curry.
  • Substitute the tofu with shrimp or chicken for a different protein option, adjusting the cooking time accordingly.
