Description

Tembleque is a traditional Puerto Rican dessert made with coconut milk, sugar, and cornstarch, resulting in a creamy and delicious treat.


Ingredients

  • 2 cups coconut milk
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (for garnish)
  • Toasted coconut flakes (for garnish, optional)

Instructions

  1. In a medium saucepan, combine the coconut milk, whole milk, sugar, and salt. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is warm, but not boiling.
  2. In a separate bowl, whisk together the cornstarch and 1/2 cup of the warm milk mixture until smooth.
  3. Gradually pour the cornstarch mixture back into the saucepan with the remaining milk mixture, whisking constantly to prevent lumps.
  4. Continue to cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the mixture into individual serving cups or a large mold. Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until set.
  7. To serve, gently unmold the tembleque if using a mold, or serve directly from the cups. Sprinkle with ground cinnamon and toasted coconut flakes, if desired.

Notes

  • For a richer flavor, use full-fat coconut milk instead of light coconut milk.
  • You can also add a splash of almond extract for a nutty twist.
  • For a tropical variation, top with fresh mango or pineapple before serving.
