Description
Tembleque is a traditional Puerto Rican dessert made with coconut milk, sugar, and cornstarch, resulting in a creamy and delicious treat.

- 2 cups coconut milk
- 1 cup whole milk
- 1/2 cup granulated sugar
- 1/3 cup cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (for garnish)
- Toasted coconut flakes (for garnish, optional)
Instructions
- In a medium saucepan, combine the coconut milk, whole milk, sugar, and salt. Heat over medium heat, stirring occasionally until the sugar dissolves and the mixture is warm, but not boiling.
- In a separate bowl, whisk together the cornstarch and 1/2 cup of the warm milk mixture until smooth.
- Gradually pour the cornstarch mixture back into the saucepan with the remaining milk mixture, whisking constantly to prevent lumps.
- Continue to cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract.
- Pour the mixture into individual serving cups or a large mold. Allow to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until set.
- To serve, gently unmold the tembleque if using a mold, or serve directly from the cups. Sprinkle with ground cinnamon and toasted coconut flakes, if desired.
Notes
- For a richer flavor, use full-fat coconut milk instead of light coconut milk.
- You can also add a splash of almond extract for a nutty twist.
- For a tropical variation, top with fresh mango or pineapple before serving.
