Description

Crispy Takoyaki Balls


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 ½ cups dashi stock (or water)
  • 2 large eggs
  • 1 teaspoon soy sauce
  • 1 teaspoon mirin (optional)
  • 1 cup cooked octopus, diced
  • ½ cup green onions, finely chopped
  • ½ cup pickled ginger, chopped
  • ½ cup tempura scraps (tenkasu)
  • Vegetable oil, for cooking

For serving:

  • Takoyaki sauce
  • Japanese mayonnaise
  • Aonori (seaweed flakes)
  • Katsuobushi (bonito flakes)

Instructions

  1. In a large mixing bowl, whisk together the flour, dashi stock, eggs, soy sauce, and mirin until smooth. Let the batter rest for about 10 minutes.
  2. Preheat a takoyaki pan over medium heat and lightly grease each mold with vegetable oil.
  3. Pour the batter into each mold, filling them about ¾ full.
  4. Add a small amount of diced octopus, green onions, pickled ginger, and tempura scraps to each mold.
  5. Allow the batter to cook for about 2-3 minutes until the edges start to set.
  6. Using a skewer or chopsticks, carefully turn each ball a quarter turn to allow the uncooked batter to flow into the mold.
  7. Continue to cook for another 2-3 minutes, turning the balls every minute until they are golden brown and crispy on the outside.
  8. Remove the takoyaki from the pan and place them on a serving plate.
  9. Drizzle with takoyaki sauce and Japanese mayonnaise, then sprinkle with aonori and katsuobushi before serving.

Notes

  • For a vegetarian version, substitute the octopus with diced mushrooms or cooked sweet potato.
  • Experiment with different fillings like shrimp, cheese, or even kimchi for a unique twist on traditional takoyaki.
