Description
Tacos al pastor is a traditional Mexican dish made with marinated pork, served in corn tortillas with pineapple, onion, and cilantro.

- 2 pounds pork shoulder, thinly sliced
- 1/4 cup pineapple juice
- 1/4 cup white vinegar
- 3 tablespoons adobo sauce (from canned chipotle peppers)
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 cup diced pineapple (fresh or canned)
- 1/2 cup chopped onion
- 1/2 cup chopped fresh cilantro
- 12 small corn tortillas
- Lime wedges, for serving
Instructions
- In a large bowl, combine the pork shoulder slices with pineapple juice, white vinegar, adobo sauce, chili powder, cumin, oregano, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Mix well to coat the pork evenly. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.
- Preheat your grill or a large skillet over medium-high heat. Remove the pork from the marinade and let any excess marinade drip off.
- Grill or cook the pork slices for about 3-4 minutes per side, or until nicely browned and cooked through. If using a skillet, you may need to cook in batches to avoid overcrowding.
- Once cooked, let the pork rest for a few minutes before chopping it into small bite-sized pieces.
- In a separate skillet, warm the corn tortillas over medium heat until they are pliable, about 30 seconds per side.
- Assemble the tacos by placing a generous amount of the chopped pork on each tortilla. Top with diced pineapple, chopped onion, and fresh cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
Notes
- For a smoky flavor, add a few drops of liquid smoke to the marinade.
- Substitute the pork shoulder with chicken thighs for a lighter option, adjusting the cooking time as needed.
