Ingredients

  • 1 pound pork tenderloin, cut into bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 bell pepper, chopped (any color)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup onion, chopped
  • 1/2 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder

Instructions

  1. In a large bowl, combine the flour, salt, and pepper. Toss the pork pieces in the flour mixture until well coated.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the coated pork pieces and cook until browned on all sides, about 5-7 minutes. Remove the pork from the skillet and set aside.
  3. In the same skillet, add the bell pepper, onion, and pineapple. Sauté for about 3-4 minutes until the vegetables are tender.
  4. In a separate bowl, whisk together the sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, and ginger powder. Pour this sauce over the sautéed vegetables in the skillet.
  5. Return the browned pork to the skillet and stir to combine. Cook for an additional 5-7 minutes, allowing the sauce to thicken and coat the pork and vegetables.
  6. Serve hot over rice or noodles.

Notes

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the sauce.
  • To make it healthier, substitute the pork with chicken breast or tofu for a vegetarian option.
