- 2 large eggs, beaten
- 1/4 cup vegetable oil (for frying)
- 1 cup bell peppers, chopped (mix of red and green)
- 1 cup pineapple chunks (fresh or canned, drained)
- 1/2 cup onion, chopped
- 1/4 cup sugar
- 1/2 cup apple cider vinegar
- 1/4 cup ketchup
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- In a large bowl, combine flour, salt, pepper, garlic powder, and onion powder. Toss the chicken pieces in the flour mixture until evenly coated.
- Dip the coated chicken pieces into the beaten eggs, allowing any excess to drip off.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
- In the same skillet, add the chopped bell peppers, onion, and pineapple. Sauté for about 3-4 minutes until the vegetables are tender.
- In a separate bowl, whisk together sugar, apple cider vinegar, ketchup, soy sauce, cornstarch, and water until smooth. Pour this sauce over the sautéed vegetables in the skillet.
- Bring the sauce to a simmer and cook for about 2-3 minutes until it thickens slightly.
- Add the fried chicken back into the skillet, tossing to coat the chicken in the sauce. Cook for an additional 2 minutes to heat through.
- Serve hot over rice or noodles.
Notes
- For a healthier version, bake the chicken instead of frying it. Coat the chicken in the flour mixture, then spray with cooking oil and bake at 400°F for 20-25 minutes.
- Add a splash of sesame oil for an extra layer of flavor or toss in some cashews or almonds for added crunch.
