Sutlac is a creamy rice pudding that is both delicious and easy to make, perfect for dessert lovers.

- 2/3 cup short-grain rice
- 4 cups whole milk
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1/4 cup water
- 1/2 teaspoon ground cinnamon (optional, for garnish)
- Chopped nuts or raisins (optional, for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and 2 cups of milk. Bring to a gentle boil over medium heat, then reduce the heat to low and simmer for about 15-20 minutes, stirring occasionally, until the rice is tender and has absorbed most of the milk.
- In a separate bowl, mix the remaining 2 cups of milk, sugar, vanilla extract, and salt. In another small bowl, dissolve the cornstarch in the water, then add it to the milk mixture.
- Once the rice is cooked, gradually stir in the milk mixture. Cook over low heat for an additional 10-15 minutes, stirring constantly, until the pudding thickens to your desired consistency.
- Remove from heat and let it cool slightly. Pour the sutlac into individual serving bowls or a large dish.
- If desired, sprinkle with ground cinnamon and garnish with chopped nuts or raisins. Allow to cool to room temperature, then refrigerate for at least 2 hours before serving.
Notes
- For a richer flavor, substitute half of the whole milk with coconut milk.
- Add a splash of almond extract for a different flavor profile or top with fresh fruit for added freshness.
