- 2 cups sushi rice
- 2 1/2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets nori (seaweed)
- 1 small cucumber, julienned
- 1 medium carrot, julienned
- 1 avocado, sliced
- 8 ounces cooked shrimp or crab meat (optional)
- Soy sauce, for serving
- Pickled ginger, for serving
- Wasabi, for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Drain well.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
- While the rice cooks, in a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Set aside.
- Once the rice is cooked, remove it from heat and let it sit, covered, for 10 minutes. Then, transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
- Place a bamboo sushi mat on a clean surface. Lay one sheet of nori on the mat, shiny side down. With wet hands, spread about 1/2 cup of sushi rice evenly over the nori, leaving a 1-inch border at the top.
- Arrange a line of cucumber, carrot, avocado, and shrimp or crab (if using) across the center of the rice.
- Starting from the bottom, carefully roll the sushi away from you, using the mat to help shape it tightly. Roll until you reach the border of nori, then wet the edge with a little water to seal the roll.
- Using a sharp knife, slice the roll into 6-8 pieces. Repeat with the remaining ingredients.
- Serve with soy sauce, pickled ginger, and wasabi on the side.
Notes
- For a spicy kick, add a drizzle of sriracha inside the roll or mix it with the soy sauce for dipping.
- You can substitute the vegetables with your favorite fillings, such as bell peppers, radish, or even cooked eel for a different flavor profile.
