- 2 cups cooked risotto (preferably cooled)
- 1 cup mozzarella cheese, diced
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- Vegetable oil for frying
Instructions
- In a large bowl, combine the cooled risotto, diced mozzarella, salt, black pepper, and garlic powder. Mix well until the cheese is evenly distributed.
- Using your hands, take a small amount of the risotto mixture and form it into a ball about the size of a golf ball. Repeat with the remaining mixture.
- Set up a breading station: Place the flour in one shallow dish, beat the eggs in another, and put the breadcrumbs in a third dish.
- Roll each risotto ball in the flour, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Ensure each ball is fully covered.
- Heat about 2 inches of vegetable oil in a deep skillet over medium heat until it reaches 350°F. Carefully add a few risotto balls at a time, frying them until golden brown, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
- Serve hot with marinara sauce for dipping.
Notes
- For a spicy kick, add crushed red pepper flakes to the risotto mixture.
- You can substitute the mozzarella with other cheeses like fontina or provolone for different flavors.
