A delightful recipe for Sugar-Free Orange Candied Almonds that are sweetened with erythritol and flavored with orange juice and zest.

- 2 cups raw almonds
- 1/2 cup erythritol (or your preferred sugar substitute)
- 1/4 cup orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium saucepan over medium heat, combine the erythritol, orange juice, orange zest, vanilla extract, cinnamon, and salt. Stir until the erythritol is dissolved and the mixture begins to simmer.
- Add the almonds to the saucepan and stir until they are well coated with the orange mixture.
- Spread the coated almonds evenly on the prepared baking sheet.
- Bake in the preheated oven for 10-15 minutes, stirring every 5 minutes to ensure even coating and prevent burning. Watch closely as they can brown quickly.
- Remove from the oven and let the almonds cool completely on the baking sheet. They will harden as they cool.
- Once cooled, break apart any clumps and store in an airtight container.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the orange mixture.
- Substitute lemon juice and zest for a different citrus flavor.
