  • 1 cup almond flour
  • 1/4 cup powdered erythritol
  • 1/4 teaspoon salt
  • 2 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the almond flour, powdered erythritol, and salt until well combined.
  3. In a separate bowl, beat the egg whites with an electric mixer on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form.
  4. Gradually add the remaining powdered erythritol while beating on high speed until stiff peaks form. Add the vanilla extract and any food coloring, mixing gently until combined.
  5. Carefully fold the dry ingredients into the egg white mixture in three additions, being cautious not to deflate the egg whites. The mixture should be smooth and glossy.
  6. Transfer the batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets, leaving space between each macaron.
  7. Tap the baking sheets gently on the counter to release any air bubbles. Let the macarons sit at room temperature for 30-60 minutes until a skin forms on the surface.
  8. Bake in the preheated oven for 15-20 minutes, or until the macarons are set and can be easily lifted off the parchment paper.
  9. Allow the macarons to cool completely on the baking sheets before filling with your favorite sugar-free filling, such as sugar-free buttercream or whipped cream.
