Description

A delicious and hearty recipe for stuffed bell peppers that the whole family will love.


Ingredients

  • 2 large bell peppers (any color)
  • 1 cup cooked rice (white or brown)
  • 1 pound ground beef or turkey
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside with olive oil and place them in a baking dish.
  3. In a large skillet over medium heat, add the olive oil. Sauté the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.
  4. Add the ground beef or turkey to the skillet. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the cooked rice, diced tomatoes, oregano, chili powder, salt, and black pepper. Cook for another 2-3 minutes until heated through.
  6. Remove the skillet from heat and stir in half of the shredded cheese.
  7. Spoon the filling into each bell pepper, packing it tightly. Top with the remaining cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired before serving.
