  • 1/4 teaspoon sea salt
  • Wooden sticks or skewers

Instructions

  1. Begin by preparing the strawberries by carefully inserting a wooden stick into the top of each berry, ensuring it is secure. Set them aside on a plate.
  2. In a saucepan, mix together the sugar, water, corn syrup, lemon juice, and sea salt.
  3. Heat the mixture over medium-high heat, stirring gently until the sugar is fully dissolved.
  4. Once it reaches a boil, stop stirring and allow it to bubble away until it reaches the hard crack stage, which is about 300°F, taking approximately 10-15 minutes.
  5. After reaching the desired temperature, remove the pan from the heat and let it sit for a minute to calm down.
  6. Quickly dip each strawberry into the hot syrup, making sure to coat it thoroughly, then let any excess syrup drip back into the pan.
  7. Arrange the dipped strawberries on a baking sheet lined with parchment paper and let them cool for 15-20 minutes until the candy coating hardens.
  8. Enjoy them right away or store them in a sealed container for a maximum of one day at room temperature.
