Description

Stovies is a traditional comfort dish made with ground meat, potatoes, and peas, simmered in a flavorful broth.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or lamb
  • 4 medium potatoes, peeled and diced
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef or lamb to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  5. Stir in the diced potatoes, beef broth, Worcestershire sauce, dried thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 30-40 minutes, or until the potatoes are tender.
  7. Add the frozen peas to the pot and stir well. Cook for an additional 5 minutes until the peas are heated through. Adjust seasoning if needed.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

  • For a creamier version, add 1/2 cup of heavy cream during the last 5 minutes of cooking.
  • To make it vegetarian, substitute the meat with 1 can of drained and rinsed chickpeas and use vegetable broth instead.
