A quick and tasty stir-fried noodle dish featuring chow mein noodles and a variety of colorful vegetables.

- 8 ounces chow mein noodles
- 2 tablespoons vegetable oil
- 1 cup sliced bell peppers (red, green, or yellow)
- 1 cup sliced carrots
- 1 cup bean sprouts
- 1 cup sliced green onions
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 teaspoon sesame oil
- Salt and pepper to taste
- Cooked protein of choice (chicken, beef, shrimp, or tofu), optional
Instructions
- Cook the chow mein noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the minced garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add the sliced bell peppers and carrots to the skillet, stir-frying for 3-4 minutes until they begin to soften.
- If using, add your cooked protein to the skillet and stir until heated through.
- Add the bean sprouts and cooked chow mein noodles to the skillet.
- Pour in the soy sauce, oyster sauce (if using), and sesame oil. Toss everything together until well combined and heated through, about 2-3 minutes.
- Season with salt and pepper to taste.
- Remove from heat and garnish with sliced green onions before serving.
Notes
- For added crunch, toss in some chopped peanuts or cashews just before serving.
- Substitute the vegetables with your favorites, such as broccoli, snap peas, or zucchini for a different flavor and texture.
