Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or a similar-sized baking pan.
- In a medium bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, pour the boiling water over the chopped dates and let them sit for about 10 minutes until softened.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the date mixture. Mix until just combined.
- Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- While the pudding is baking, prepare the sauce by combining the heavy cream, brown sugar, butter, and vanilla extract in a saucepan over medium heat. Stir until the sugar is dissolved and the mixture is smooth.
- Once the pudding is done, remove it from the oven and let it cool for about 10 minutes. Then, poke holes in the top with a skewer or fork and pour half of the warm sauce over the pudding to soak in.
- Serve warm, drizzled with the remaining sauce.
