Sticky toffee pudding is a classic British dessert that combines a moist sponge cake made with dates and a rich toffee sauce, perfect for any occasion.

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish or a similar-sized oven-safe dish.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. This should take about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, combine the chopped dates and boiling water. Let it sit for about 10 minutes until the dates soften.
  6. Stir the date mixture into the butter mixture until well combined. Gradually add the dry ingredients, mixing until just combined.
  7. Pour the batter into the prepared baking dish and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. While the pudding is baking, prepare the toffee sauce. In a saucepan over medium heat, combine the heavy cream, dark brown sugar, and butter. Stir until the sugar has dissolved and the mixture is smooth. Add the vanilla extract and remove from heat.
  9. Once the pudding is done, let it cool for about 10 minutes before serving. Drizzle the warm toffee sauce over the pudding and serve with whipped cream or vanilla ice cream.
