A delicious and unique dish featuring squid, nduja, roasted tomatoes, anchovies, and burrata cheese, perfect for sharing.

- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 8 ounces nduja (spicy spreadable salami)
- 1 pound cleaned squid, cut into rings
- 1 can (2 ounces) anchovy fillets, drained
- 8 ounces burrata cheese
- Fresh basil leaves for garnish
- Crusty bread for serving
Instructions
- Preheat the oven to 400°F.
- In a baking dish, combine cherry tomatoes, olive oil, salt, black pepper, and garlic powder. Toss to coat and spread evenly.
- Roast in the oven for 20-25 minutes, until the tomatoes are blistered and soft.
- While the tomatoes are roasting, heat a skillet over medium heat. Add the nduja and cook for about 2 minutes until it starts to sizzle.
- Add the squid rings to the skillet and cook for 3-4 minutes, stirring occasionally, until the squid is opaque and tender. Remove from heat.
- Once the tomatoes are done, remove them from the oven and gently mix them with the nduja and squid mixture.
- On a serving platter, spoon the squid and tomato mixture.
- Tear the burrata into pieces and place it on top.
- Scatter the anchovy fillets over the burrata and garnish with fresh basil leaves.
- Serve immediately with crusty bread for dipping.
Notes
- For a milder flavor, substitute the nduja with chorizo.
- You can also add a squeeze of lemon juice over the top for a bright finish.
- For a vegetarian option, replace the squid and anchovies with sautéed mushrooms and olives.
