Instructions
- In a large mixing bowl, whisk together the flour, baking powder, salt, and cinnamon. Set aside.
- In another bowl, cream the softened butter and sugar together until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, and mix until just combined.
- Fold in the currants or raisins until evenly distributed.
- Grease a 2-quart pudding basin or a heatproof bowl. Pour the batter into the prepared basin, smoothing the top.
- Cover the basin with a piece of parchment paper and then with aluminum foil, securing it tightly.
- Place the basin in a large pot with water, ensuring the water reaches halfway up the sides of the basin. Bring the water to a gentle simmer.
- Steam the pudding for about 1.5 to 2 hours, checking occasionally to ensure the water doesn’t evaporate. Add more water as needed.
- Once cooked, carefully remove the basin from the pot and let it cool for a few minutes before unmolding onto a serving plate.
Notes
- For a richer flavor, consider adding a tablespoon of lemon zest to the batter.
- Serve the pudding warm with a drizzle of custard or cream for added indulgence.
- For a twist, substitute the currants with chopped dried apricots or cranberries.
