Ingredients

  • 2 cups dried green split peas, rinsed and drained
  • 8 cups vegetable broth or water
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup diced ham (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened.
  2. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add the rinsed split peas, vegetable broth (or water), thyme, bay leaf, salt, and black pepper. If using, add the diced ham.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 1 hour, or until the peas are tender. Stir occasionally to prevent sticking.
  5. Once the peas are soft, remove the bay leaf. Use an immersion blender to puree the soup to your desired consistency, or leave it chunky if preferred.
  6. Taste and adjust seasoning if necessary. If the soup is too thick, add more broth or water to reach your desired consistency.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a smoky flavor, add a teaspoon of smoked paprika or a few drops of liquid smoke.
  • Substitute the ham with cooked bacon or turkey for a different protein option, or omit it entirely for a vegetarian version.
