- 1 ripe mango, diced

- 8 small corn or flour tortillas
- 1 cup shredded red cabbage
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- In a medium bowl, combine the chickpeas, diced mango, olive oil, chili powder, cumin, cayenne pepper, salt, and pepper. Toss until well coated.
- Heat a large skillet over medium heat and add the chickpea and mango mixture. Cook for about 5-7 minutes, stirring occasionally, until heated through and slightly caramelized.
- While the mixture is cooking, warm the tortillas in a separate skillet or microwave until pliable.
- To assemble the tacos, place a generous spoonful of the chickpea and mango mixture on each tortilla.
- Top with shredded red cabbage and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
