Description

A delicious and unique dish featuring crispy wontons filled with spicy lamb and ricotta, topped with crispy sage and chili oil.


Ingredients

  • 1 pound ground lamb
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon olive oil
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup fresh sage leaves
  • 1/2 cup chili oil (store-bought or homemade)
  • 1 package (12 oz) of wonton wrappers
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, add olive oil. Once hot, add the ground lamb, salt, black pepper, smoked paprika, and ground cumin. Cook until the lamb is browned and cooked through, about 7-10 minutes. Drain any excess fat and set aside to cool slightly.
  2. In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, lemon juice, and red pepper flakes. Stir until well combined. Add the cooked lamb to the ricotta mixture and mix until evenly distributed.
  3. Lay out the wonton wrappers on a clean surface. Place about 1 tablespoon of the lamb and ricotta mixture in the center of each wrapper. Moisten the edges with water and fold the wrapper over to create a triangle, pressing to seal tightly. Repeat until all filling is used.
  4. In a small saucepan, heat the chili oil over medium heat. Add the fresh sage leaves and fry for about 1-2 minutes until crispy. Remove the sage leaves and set aside on a paper towel to drain.
  5. In the same saucepan, fry the filled wontons in batches until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
  6. To serve, arrange the crispy wontons on a platter, drizzle with the chili oil, and top with crispy sage leaves. Garnish with fresh parsley.
