A delicious and aromatic Spiced Coconut Chicken Curry inspired by Sri Lankan flavors.


Ingredients

  • 2 pounds boneless, skinless chicken thighs, diced into small chunks
  • 1 tablespoon olive oil
  • 1 large onion, chopped finely
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green chilies, sliced lengthwise (adjust for heat level)
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 can (14 ounces) coconut milk
  • 1 cup chicken stock
  • 1 tablespoon lime juice
  • Salt, to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a deep skillet or heavy-bottomed pot, warm the olive oil over medium heat.
  2. Add the finely chopped onion and sauté until it becomes soft and translucent, approximately 5 minutes.
  3. Incorporate the minced garlic, grated ginger, and sliced green chilies, cooking for an additional 2-3 minutes until aromatic.
  4. Sprinkle in the curry powder, turmeric, cumin, and coriander, stirring well to combine and cook for about a minute.
  5. Introduce the diced chicken to the pot, mixing thoroughly to ensure the chicken is well-coated with the spices. Sauté for about 5 minutes until golden brown.
  6. Pour in the coconut milk and chicken stock, stirring to combine. Bring to a gentle simmer, then lower the heat and cover the pot.
  7. Let it cook for 25-30 minutes, stirring occasionally, until the chicken is tender and fully cooked.
  8. Add the lime juice and season with salt according to your taste. Remove from heat and let it rest for a few minutes.
  9. Serve garnished with freshly chopped cilantro.

  • For a thicker curry, let it simmer uncovered for a few additional minutes.
