A delicious and aromatic Spiced Coconut Chicken Curry inspired by Sri Lankan flavors.

- 2 pounds boneless, skinless chicken thighs, diced into small chunks
- 1 tablespoon olive oil
- 1 large onion, chopped finely
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green chilies, sliced lengthwise (adjust for heat level)
- 1 tablespoon curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 can (14 ounces) coconut milk
- 1 cup chicken stock
- 1 tablespoon lime juice
- Salt, to taste
- Fresh cilantro, chopped, for garnish
Instructions
- In a deep skillet or heavy-bottomed pot, warm the olive oil over medium heat.
- Add the finely chopped onion and sauté until it becomes soft and translucent, approximately 5 minutes.
- Incorporate the minced garlic, grated ginger, and sliced green chilies, cooking for an additional 2-3 minutes until aromatic.
- Sprinkle in the curry powder, turmeric, cumin, and coriander, stirring well to combine and cook for about a minute.
- Introduce the diced chicken to the pot, mixing thoroughly to ensure the chicken is well-coated with the spices. Sauté for about 5 minutes until golden brown.
- Pour in the coconut milk and chicken stock, stirring to combine. Bring to a gentle simmer, then lower the heat and cover the pot.
- Let it cook for 25-30 minutes, stirring occasionally, until the chicken is tender and fully cooked.
- Add the lime juice and season with salt according to your taste. Remove from heat and let it rest for a few minutes.
- Serve garnished with freshly chopped cilantro.
Notes
- Adjust the number of green chilies based on your heat preference.
- For a thicker curry, let it simmer uncovered for a few additional minutes.
