  • 1 pound fresh spinach, chopped (or 10 ounces frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 package (16 ounces) phyllo dough, thawed
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the chopped spinach, ricotta cheese, feta cheese, Parmesan cheese, green onions, garlic, dill, black pepper, and salt. Mix well until all ingredients are combined.
  3. Lay one sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush with butter again. Repeat this process until you have 4 sheets stacked.
  4. Place about 1/4 cup of the spinach mixture along one edge of the phyllo dough. Fold the sides over the filling and roll the dough tightly to form a log. Place the log seam-side down on a baking sheet lined with parchment paper.
  5. Repeat the process with the remaining phyllo dough and filling, placing each log on the baking sheet.
  6. Brush the tops of the logs with any remaining melted butter.
  7. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

  • For a healthier option, you can use whole wheat phyllo dough or reduce the amount of butter used for brushing.
