- 1/2 cup heavy cream
- 1/2 cup powdered erythritol (or your preferred sugar substitute)
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
- 3 large egg yolks
- 1 tablespoon cornstarch (optional, for thicker custard)
- 1/2 teaspoon gelatin (optional, for a firmer texture)
Instructions
- In a medium saucepan, combine the almond milk, heavy cream, erythritol, vanilla extract, and salt. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
- In a separate bowl, whisk together the egg yolks until smooth. If using cornstarch, mix it with a tablespoon of the warm milk mixture to create a slurry.
- Slowly pour the warm milk mixture into the egg yolks while whisking continuously to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). If using gelatin, sprinkle it over the mixture and stir until dissolved.
- Remove from heat and let cool slightly. Pour the custard into individual cups or ramekins.
- Cover with plastic wrap and refrigerate for at least 2 hours or until set.
- Serve chilled, optionally topped with whipped cream or a sprinkle of cocoa powder.
Notes
- For a chocolate version, add 2 tablespoons of unsweetened cocoa powder to the milk mixture.
- You can infuse the custard with flavors like almond or coconut by substituting the vanilla extract with your preferred flavor extract.
