Description

Snowy Vanilla Custard Cups are a delicious keto and sugar-free dessert that is easy to make and perfect for satisfying your sweet tooth without the carbs.


Ingredients

  • 2 cups unsweetened almond milk
  • 1/2 cup heavy cream
  • 1/2 cup powdered erythritol (or your preferred sugar substitute)
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 3 large egg yolks
  • 1 tablespoon cornstarch (optional, for thicker custard)
  • 1/2 teaspoon gelatin (optional, for a firmer texture)

Instructions

  1. In a medium saucepan, combine the almond milk, heavy cream, erythritol, vanilla extract, and salt. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.
  2. In a separate bowl, whisk together the egg yolks until smooth. If using cornstarch, mix it with a tablespoon of the warm milk mixture to create a slurry.
  3. Slowly pour the warm milk mixture into the egg yolks while whisking continuously to temper the eggs.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes). If using gelatin, sprinkle it over the mixture and stir until dissolved.
  5. Remove from heat and let cool slightly. Pour the custard into individual cups or ramekins.
  6. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
  7. Serve chilled, optionally topped with whipped cream or a sprinkle of cocoa powder.

Notes
