- 2 whole grain or everything bagels, split and toasted
- Fresh chives, chopped (for garnish)
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Heat the butter in a non-stick skillet over medium heat. Once melted, pour in the egg mixture.
- Stir gently with a spatula, cooking the eggs slowly until they are just set but still creamy, about 3-4 minutes. Remove from heat.
- Spread a generous layer of cream cheese on each toasted bagel half.
- Layer the smoked salmon on top of the cream cheese.
- Spoon the scrambled eggs over the salmon, dividing evenly between the bagel halves.
- Top each stack with a dollop of caviar, if using, and sprinkle with chopped chives.
