A creamy and delicious Skyr Cake from Iceland, perfect for any occasion.

- 2 cups skyr (plain or vanilla)
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup crushed graham crackers
- 1/4 cup unsalted butter, melted
- 1/2 cup fresh berries (strawberries, blueberries, or raspberries) for topping
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a medium bowl, combine the crushed graham crackers and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the heavy cream until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.
- In another bowl, combine the skyr, vanilla extract, and lemon juice. Mix until smooth.
- Gently fold the skyr mixture into the whipped cream until fully combined. Be careful not to deflate the whipped cream.
- Pour the skyr mixture over the crust in the springform pan, smoothing the top with a spatula.
- Refrigerate the cake for at least 4 hours, or overnight, until set.
- Before serving, top with fresh berries. Carefully remove the sides of the springform pan and slice the cake.
Notes
- For a chocolate version, add 1/4 cup of cocoa powder to the skyr mixture.
- You can substitute the graham crackers with crushed cookies like Oreos or digestive biscuits for a different flavor.
