Description

A creamy and delicious Skyr Cake from Iceland, perfect for any occasion.


Ingredients

Scale
  • 2 cups skyr (plain or vanilla)
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 1/2 cup fresh berries (strawberries, blueberries, or raspberries) for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the crushed graham crackers and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the heavy cream until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.
  4. In another bowl, combine the skyr, vanilla extract, and lemon juice. Mix until smooth.
  5. Gently fold the skyr mixture into the whipped cream until fully combined. Be careful not to deflate the whipped cream.
  6. Pour the skyr mixture over the crust in the springform pan, smoothing the top with a spatula.
  7. Refrigerate the cake for at least 4 hours, or overnight, until set.
  8. Before serving, top with fresh berries. Carefully remove the sides of the springform pan and slice the cake.

Notes

  • For a chocolate version, add 1/4 cup of cocoa powder to the skyr mixture.
  • You can substitute the graham crackers with crushed cookies like Oreos or digestive biscuits for a different flavor.
