A quick and flavorful recipe for Shrimp Stir-Fry Noodles that is perfect for a weeknight dinner.

- 8 ounces rice noodles
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 green onions, chopped
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add the red bell pepper, snap peas, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Return the shrimp to the skillet and add the cooked rice noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together to combine.
- Stir in the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens. Season with salt and pepper to taste.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- For a spicier kick, add red pepper flakes or sliced jalapeños during the stir-fry.
- Substitute shrimp with chicken or tofu for a different protein option.
