Ingredients

  • 8 ounces rice noodles
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  3. Add the shrimp to the skillet and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the red bell pepper, snap peas, garlic, and ginger. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. Return the shrimp to the skillet and add the cooked rice noodles, soy sauce, oyster sauce, and sesame oil. Toss everything together to combine.
  6. Stir in the cornstarch mixture and cook for an additional 1-2 minutes until the sauce thickens. Season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped green onions before serving.

Notes

  • For a spicier kick, add red pepper flakes or sliced jalapeños during the stir-fry.
  • Substitute shrimp with chicken or tofu for a different protein option.
