Classic Shortbread Cookies that are easy to make and deliciously buttery.

- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Add the vanilla extract and salt, mixing until well combined.
- Gradually add the flour, mixing until the dough comes together. It may be crumbly at first but will form a cohesive dough.
- Turn the dough out onto a lightly floured surface and shape it into a rectangle about 1/2 inch thick.
- Cut the dough into squares or rectangles and place them on the prepared baking sheet, leaving space between each cookie.
- Prick the tops of the cookies with a fork to create a decorative pattern and to prevent puffing during baking.
- Bake in the preheated oven for 18-20 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a twist, try adding 1/2 cup of chocolate chips or chopped nuts to the dough before shaping.
- You can also dust the cooled cookies with extra powdered sugar for a sweeter finish.
- For a lemon flavor, add the zest of one lemon to the butter and sugar mixture.
