- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup plain yogurt
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Wooden or metal skewers
Instructions
- In a large bowl, combine the yogurt, olive oil, lemon juice, minced garlic, cumin, paprika, coriander, salt, black pepper, and cayenne pepper (if using). Mix well to create a marinade.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.
- Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
- For extra flavor, consider adding bell peppers, onions, or cherry tomatoes to the skewers.
- You can also serve the shish tawook with a side of garlic sauce or tzatziki for dipping.
- For a spicy kick, marinate the chicken with a bit of harissa or your favorite hot sauce.
