Description

Ingredients

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup plain yogurt
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Wooden or metal skewers

Instructions

  1. In a large bowl, combine the yogurt, olive oil, lemon juice, minced garlic, cumin, paprika, coriander, salt, black pepper, and cayenne pepper (if using). Mix well to create a marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or ideally overnight for maximum flavor.
  3. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
