Description
A comforting and hearty Shepherd’s Pie recipe made with ground lamb or beef, topped with creamy mashed potatoes.
Ingredients
Scale
- 2 pounds ground lamb or beef
- 4 large potatoes, peeled and diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 4 tablespoons butter
- 1/2 cup milk
- 1 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pot, boil the diced potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Add butter and milk to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside.
- In a large skillet over medium heat, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the ground lamb or beef to the skillet. Cook until browned, breaking it apart with a spoon, about 7-10 minutes. Drain excess fat if necessary.
- Stir in the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, peas, and corn. Simmer for 5-7 minutes until the mixture thickens slightly. Season with salt and pepper.
- Transfer the meat mixture to a 9×13 inch baking dish. Spread the mashed potatoes evenly over the top.
- If using, sprinkle shredded cheddar cheese on top of the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a healthier option, substitute half of the potatoes with cauliflower for a lower-carb version.
- Add diced carrots or bell peppers to the meat mixture for extra flavor and nutrition.
