- 1 cup diced bell peppers (mixed colors)
- 1 cup diced onions
- 1 cup diced cooked ham (or cooked sausage)
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a large rimmed baking sheet (approximately 18×13 inches) with cooking spray or olive oil.
- In a large mixing bowl, whisk together the eggs and milk until well combined.
- Add the salt, black pepper, garlic powder, and onion powder, and mix until evenly distributed.
- Spread the diced bell peppers, onions, and cooked ham (or sausage) evenly across the greased baking sheet.
- Pour the egg mixture over the vegetables and meat, ensuring everything is evenly coated.
- Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.
- Bake in the preheated oven for 25-30 minutes, or until the eggs are set and lightly golden on top.
- A toothpick inserted in the center should come out clean.
- Remove from the oven and let it cool for a few minutes.
- Cut into squares and serve warm. Garnish with fresh herbs if desired.

- For a spicier version, add diced jalapeños or a dash of hot sauce to the egg mixture.
