Description

A delicious and easy breakfast option for the whole family, made with eggs, vegetables, and cheese, all baked on a single sheet pan.

Ingredients

Scale
  • 12 large eggs
  • 1 cup whole milk
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup diced onions
  • 1 cup diced cooked ham (or cooked sausage)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a large rimmed baking sheet (approximately 18×13 inches) with cooking spray or olive oil.
  3. In a large mixing bowl, whisk together the eggs and milk until well combined.
  4. Add the salt, black pepper, garlic powder, and onion powder, and mix until evenly distributed.
  5. Spread the diced bell peppers, onions, and cooked ham (or sausage) evenly across the greased baking sheet.
  6. Pour the egg mixture over the vegetables and meat, ensuring everything is evenly coated.
  7. Sprinkle the shredded cheddar cheese evenly over the top of the egg mixture.
  8. Bake in the preheated oven for 25-30 minutes, or until the eggs are set and lightly golden on top.
  9. A toothpick inserted in the center should come out clean.
  10. Remove from the oven and let it cool for a few minutes.
  11. Cut into squares and serve warm. Garnish with fresh herbs if desired.

Notes

  • For a spicier version, add diced jalapeños or a dash of hot sauce to the egg mixture.
  • You can substitute the ham with cooked bacon or turkey sausage for a different flavor profile.
  • For a vegetarian option, omit the meat and add more vegetables like spinach or mushrooms.
