  • 1/4 cup olive oil
  • 1/4 cup plain yogurt
  • 2 tablespoons lemon juice
  • 6 pita breads or flatbreads
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup sliced cucumbers
  • 1/4 cup tahini sauce or garlic sauce

Instructions

  1. In a large bowl, combine the minced garlic, cumin, coriander, smoked paprika, turmeric, cinnamon, cayenne pepper, salt, black pepper, olive oil, yogurt, and lemon juice. Mix well to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.
  3. Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and discard any excess marinade.
  4. Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F. Remove from heat and let rest for 5 minutes.
  5. Slice the chicken into thin strips.
  6. To assemble the sandwiches, lay a pita bread flat and add a generous portion of sliced chicken. Top with shredded lettuce, diced tomatoes, sliced cucumbers, and drizzle with tahini sauce or garlic sauce.
  7. Roll up the pita tightly around the filling and serve immediately.
