Sfiha are delicious Middle Eastern meat pies that are flaky and filled with a savory mixture of ground beef or lamb, spices, and herbs.

- 1 pound ground beef or lamb
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup pine nuts (optional)
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil
- 1 package (1 lb) pizza dough or puff pastry
- 1 egg, beaten (for egg wash)
- Lemon wedges (for serving)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef or lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the cumin, coriander, paprika, cinnamon, salt, black pepper, and pine nuts (if using). Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat and stir in the chopped parsley. Allow the mixture to cool slightly.
- Roll out the pizza dough or puff pastry on a lightly floured surface to about 1/8 inch thick. Cut into 3-inch circles using a cookie cutter or a glass.
- Place about 1 tablespoon of the meat mixture in the center of each circle. Fold the edges over to create a triangle or a half-moon shape, pinching the edges to seal.
- Arrange the sfiha on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until the pastries are golden brown.
- Serve warm with lemon wedges on the side for squeezing over the sfiha.
Notes
- For a vegetarian option, substitute the meat with a mixture of sautéed mushrooms, spinach, and feta cheese.
- Experiment with different spices such as sumac or allspice for a unique flavor profile.
