Description

A delightful dish featuring seared foie gras with a balsamic reduction, served on a bed of microgreens and topped with toasted almonds.


Ingredients

Scale
  • 2 slices of foie gras (about 2 ounces each)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 1 cup microgreens (such as arugula or pea shoots)
  • 1/4 cup sliced almonds, toasted
  • 1 tablespoon honey
  • Fresh lemon juice (to taste)

Instructions

  1. Heat a skillet over medium-high heat.
  2. Add olive oil and let it heat until shimmering.
  3. Season the foie gras slices with salt and pepper on both sides.
  4. Carefully place the foie gras in the hot skillet.
  5. Sear for about 30 seconds to 1 minute on each side until browned and crispy.
  6. Remove from the skillet and place on a paper towel to drain excess fat.
  7. In the same skillet, reduce the heat to medium and add balsamic vinegar.
  8. Allow it to simmer for about 5 minutes until it thickens slightly.
  9. Stir in honey and a splash of fresh lemon juice to balance the flavors.
  10. On a serving plate, arrange the microgreens.
  11. Place the seared foie gras on top and drizzle with the balsamic reduction.
  12. Sprinkle toasted almonds over the dish for added crunch.
  13. Serve immediately while the foie gras is warm.

  • For a lighter version, substitute the foie gras with seared duck breast.
