Instructions
- Heat a skillet over medium-high heat.
- Add olive oil and let it heat until shimmering.
- Season the foie gras slices with salt and pepper on both sides.
- Carefully place the foie gras in the hot skillet.
- Sear for about 30 seconds to 1 minute on each side until browned and crispy.
- Remove from the skillet and place on a paper towel to drain excess fat.
- In the same skillet, reduce the heat to medium and add balsamic vinegar.
- Allow it to simmer for about 5 minutes until it thickens slightly.
- Stir in honey and a splash of fresh lemon juice to balance the flavors.
- On a serving plate, arrange the microgreens.
- Place the seared foie gras on top and drizzle with the balsamic reduction.
- Sprinkle toasted almonds over the dish for added crunch.
- Serve immediately while the foie gras is warm.

- For a lighter version, substitute the foie gras with seared duck breast.
